Lightening Chicken by Victor Joseph
  • For three boneless chicken breasts (1 1/2 to 2lbs.) you will need:
  • Medium size pot
  • 1 medium sized onion (chopped)
  • 1 clove garlic (chopped)
  • 1oz corn oil
  • 2oz lemon juice
  • 4oz Pasta Sauce
  • 4oz water
  • 4oz or add to taste cayenne pepper sauce (add last)
Cut chicken into 1 1/4 inch chunks. Place corn oil and chicken into pot and heat on low for about 45 minutes or until half way cooked. Add above ingredients (except for pepper sauce) and mix thoroughly. Let simmer on low for about 1 hour 15 minutes or until chicken is tender. Spoon in hot sauce and stir mixture thoroughly. Boil egg noodles according to package and strain, add butter and mix well. Lay chicken on top of noodles and serve.
Feta Cheese Pasta Dish by Rebecca W.
  • You will need:
  • 1 package crumbled feta cheese
  • 1lb. thin spaghetti
  • 2tbs. margarine
  • 2tbs. olive oil
  • 2tbs. lemon juice
  • 1/2tsp. garlic powder
  • 2oz. sliced green pimento olives (or to taste)
  • 1/4tsp. cheyenne pepper
  • 1/8tsp. oregano
  • 3 leaves of finely chopped parsley
Boil spaghetti and strain. Add margarine and oil and mix thoroughly. Add above ingredients and mix again. Allow the mixture to sit for about one minute. Best when served hot while the cheese is still melted.
Chocolate Dipped Strawberries by Lucy D.
  • You will need:
  • 1 carton of large strawberries (thoroughly washed and gently dried with a paper towel)
  • 1/4lb. of dark or milk chocolate (dark is best)
  • wax paper, tray, and tablespoon
Microwave the chocolate in a wide bowl for about 1 minute. Be very careful not to burn the chocolate. When thoroughly creamy and pliable, roll each strawberry around the bowl using the tablespoon to cover the berry completely and roll again for a smooth texture across the berry. Lay each on wax paper, careful not to let the berries touch. Chill for about twenty minutes and eat.
